- Low maintenance and hardy. Will survive on its own in most climates with minimum water and will come up in a patch. Or you can water and cultivate it for bigger roots and plants.
- Healthy to eat, loaded with inulin they are one of the best vegetables for people with diabetes. Good for gut health, contain vitamin C,A,E and supports weight management. A great alterative to the potato and great with any meal. Many ways to prepare them I usually put a few in the oven or microwave and eat them with ketchup:)
